Ingredients

Marinated Seabass
200 g fillet of Sea Bass
1 tsp tsp turmeric
1 tsp tablespoons coconut milk
1 tsp tsp soy sauce
1 tsp Tea Honey

Green Mango Relish
200g of green mangoes, peeled and cut into julienne
30g carrot, peeled and cut into julienne
30g shallots, finely sliced
bird eye chilli 1 minced
1 tsp tablespoon soy sauce
1 tsp tablespoon honey
1 tsp tablespoons lime juice
Coriander leaves for garnish

Method

Marinated Seabass
Preheat oven to 100C. bar marinate with turmeric, coconut milk, soy sauce and honey, then bake for 10 minutes or until cooked medium. Set aside.

Green Mango Relish
To prepare dressing, combine the soy sauce, honey, lime juice and pepper in a bowl mix well. Add all remaining relish ingredients into the bowl with the dressing. Toss until mixed.

To Serve

Arrange the bass cooked on the center of the plate, put the taste of green mango on top of fish, and sprinkle with cilantro.
